On-ramp stability for merchant processing with USDC

Hey everyone, trying to get my head around this. We're looking at integrating $USDC for a B2B service, primarily for cross-border payments. The main draw is the speed and lower fees compared to traditional rails. What I'm still a bit fuzzy on is the risk exposure from the moment a payment hits our wallet to when it's converted to fiat in our bank account. Are most people using immediate conversion on a stable exchange, or is there a common practice for holding USDC briefly to batch transactions? And what are the hidden pitfalls with the on-ramp/off-ramp partners beyond just fees?
