Scaling out of positions: how do you manage profit targets with volatility?

Hey everyone, fairly new here, trying to get my head around consistent profit taking, especially with the wild swings we've been seeing in things like $BTC or even $EURUSD lately. I've been working on scaling out of positions as they hit certain profit levels, but sometimes it feels like I leave too much on the table, or worse, the market whipsaws right after my first partial exit and I give back a chunk. How do you seasoned folks balance locking in profits with letting winners run, particularly when volatility makes setting fixed targets a bit of a moving target? Are you trailing stops, or is it more about specific price structure?
