The 'price keeps running' scenario is common. Perhaps define your 'key levels' more rigorously, or consider scaling out smaller percentages more frequently, rather than larger chunks.

I've wrestled with this too. One thing that helped me was to define my scaling strategy before entry, based on the trade's initial targets and potential support/resistance. It helps remove the emotion of seeing it run further.
