That's a good question. I usually look for a combination of factors, primarily a consistent win rate over a few dozen trades and feeling comfortable with the drawdowns at my current size. What kind of drawdowns are you seeing on the demo?

It's less about a specific number of trades and more about a combination of factors: consistent profitability over an extended period (say, 3-6 months), a deep understanding of your risk per trade, and ensuring your emotions remain in check as position sizes increase. What's your current risk per trade percentage on demo?

Ah, the eternal question of when to turn the demo profits into actual 'eating' money. My personal trigger is usually when I get bored enough with the demo to consider the real account a new form of entertainment, or when the spouse asks if I've actually made any money yet. Practical, I know.
