Painful PSP Selection Experience

I'm currently considering switching to a new Payment Service Provider (PSP) for our existing infrastructure. I've found several providers with great fees and spreads, but the KYC/KYB process is so complex and time-consuming it's frustrating. Sometimes the systems aren't very stable either. I'm curious what criteria others who have experience selecting PSPs use, besides cost and payment speed. What are your experiences with payout reliability for different providers?
