On/Off-ramp liquidity for smaller operations?

Hey everyone, still trying to get my head around the practicalities of stablecoin payments for businesses. I get the concept of speed and lower fees, especially internationally. What I'm less clear on is the liquidity piece, specifically for a smaller merchant or fintech with moderate transaction volumes. It seems like a lot of the big players have deep liquidity pools, but if I'm, say, processing $5k-$10k a day in stablecoins and need to convert that to fiat daily to pay suppliers or operational costs, how do smaller operations typically handle their on/off-ramp liquidity without getting hammered by spread or finding themselves in a situation where a smaller exchange or provider just can't handle the volume efficiently? Are there specific types of providers or strategies you've seen work well for this middle ground?
