Scaling out of $ETH positions – best practice for partial sells?

Still learning here. When scaling out of a larger $ETH position, do most of you set multiple limit orders at increasing prices, or do you manually trail and sell chunks as it moves? I'm finding it hard to define the "right" percentage to take off at each level without feeling like I left too much on the table, or sold too early. Any advice on structuring this?
